Mrs. WilkesÂ’ Boarding House Seafood Casserole
- 1/2 C green peppers chopped
- 1/2 C onions, finely chopped
- 1 C celery, chopped
- 1/2 C pimentos, chopped
- 1 10oz can mushroom soup
- 1 4oz can mushrooms
- 1 C mayonnaise
- 8 T Butter
- 1/2 t salt
- 1/2 t lemon juice
- 1 T Worcestershire sauce
- 1 C Milk
- 3 C cooked rice
- 1 C mild cheddar cheese, grated
- 1 Lb claw crab meat
- 1 Lb shrimp 21-25ct, cooked
- Lemon wedges
- 1. Preheat oven to 350 and spray 3 qt casserole dish with cooking spray.
- 2. Saute the green pepper, onions and celery in butter.
- 3. In a large bowl combine the rest of the ingredients, except for the cheese. Add the sauteed vegetables and mix well.
- 4. Pour into casserole dish and top with cheese.
- 5. Bake at 350 for 45 minutes
- Serve with Lemon wedges.
