White Asparagus With Vinegarette

  1. In a bowl, combine all the ingredients through the capers.
  2. Stir in lemon juice. Add oil in a stream. Season with salt and pepper.
  3. Rinse and dry asparagus, if canned, and pat dry. Chill.
  4. Arrange asparagus on bibb lettuce; spoon dressing on top. Pass additional dressing.
