White Asparagus With Vinegarette
- 1/2 c minced parsley
- 2 hard cooked eggs, chopped
- 1/3 c minced pimento
- 1/3 c minced black olives
- 4 anchovy filets, rinsed, patted dry, minced
- 1 T capers, crushed and rinsed
- Dressing:
- 1/3 c lemon juice
- 1/2 c vegetable oil
- 1/2 c olive oil
- Salt & pepper to taste
- 2-4 16 oz cans white asparagus, depending on number of servings
- Bibb Lettuce
- In a bowl, combine all the ingredients through the capers.
- Stir in lemon juice. Add oil in a stream. Season with salt and pepper.
- Rinse and dry asparagus, if canned, and pat dry. Chill.
- Arrange asparagus on bibb lettuce; spoon dressing on top. Pass additional dressing.
