Almond Currant Granola
- 3 c old-fashioned, rolled oats
- 1 c currants
- 3/4 c sliced almonds
- 3/4 c chopped hazelnuts
- 3/4 c pepitas (pumpkin seeds)
- 3/4 c unsweetened, shredded coconut
- 1/4 c brown sugar
- 1/4 c water
- 4 T unsalted butter
- 2 T maple syrup
- 1 t ground cinnamon
- 1/2 t salt
- Zest of one orange
- 1. Preheat oven to 300 F.
- 2. In large bowl, combine all ingredients through coconut. Mix well.
- 3. In a small saucepan, combine sugar, water, butter, maple syrup, cinnamon, salt and zest. Heat until bubbly and sugar dissolved.
- 4. Pour hot liquid over dry ingredients, and mix until coated.
- 5. Spread granola on a baking sheet. Bake 20 minutes, stirring at least once halfway through, until golden brown. Let cool before storing.
