Bananas On A Raft
- ****FRENCH TOAST:
- 3 eggs
- 3/4 cup milk
- 1 grated orange, (zest)
- 1/4 cup orange juice (squeeze from orange)
- 1/4 teaspoon vanilla or almond extract
- 1/3 cup to 2/3 cup pancake mix with pudding mix
- 2 Tablespoons of sugar
- 1/4 teaspoon cinnamon
- 8 slices of french bread or texas toast
- Cooking spray
- 1-2 bananas, peeled and sliced
- powdered sugar for dusting
- ****SYRUP
- 1 Tablespoon butter
- 1 Tablespoon chopped pecan
- 1 cup maple syrup
- 1/2 teaspoon of rum extract
- ****FRENCH TOAST
- 1. In a mixing bowl, whisk the eggs, milk, and orange zest, orange juice, sugar, pancake mix, cinnamon and vanilla. (Mix the cinnamon, pancake mix and sugar together first)
- 2. Mix until the sugar is dissolved.
- 3. On a non-stick frying pan, spray with cooking spray
- 4. Dip 2 slices of bread into the egg-milk mixture, coating evenly.
- 5. Fry in the butter until golden brown, 2-3 minutes each side.
- 6. Repeat til all bread is used.
- 7. Lay the french toast on a plater
- 8. Add the bananas to the toast
- 9. Spoon the warm sauce over the toast
- 10. Dust with powdered sugar and cool whip if desired.
- ****SYRUP
- In a medium sauce pan, melt 1 Tablespoon of butter.
- Add the pecans and saute for 4-5 minutes, stirring constantly
- Stir in the maple syrup and bring the liquid to a simmer.
- Remove the pan from the stove and add the rum extract.
