Bananas On A Raft

  1. ****FRENCH TOAST
  2. 1. In a mixing bowl, whisk the eggs, milk, and orange zest, orange juice, sugar, pancake mix, cinnamon and vanilla. (Mix the cinnamon, pancake mix and sugar together first)
  3. 2. Mix until the sugar is dissolved.
  4. 3. On a non-stick frying pan, spray with cooking spray
  5. 4. Dip 2 slices of bread into the egg-milk mixture, coating evenly.
  6. 5. Fry in the butter until golden brown, 2-3 minutes each side.
  7. 6. Repeat til all bread is used.
  8. 7. Lay the french toast on a plater
  9. 8. Add the bananas to the toast
  10. 9. Spoon the warm sauce over the toast
  11. 10. Dust with powdered sugar and cool whip if desired.
  12. ****SYRUP
  13. In a medium sauce pan, melt 1 Tablespoon of butter.
  14. Add the pecans and saute for 4-5 minutes, stirring constantly
  15. Stir in the maple syrup and bring the liquid to a simmer.
  16. Remove the pan from the stove and add the rum extract.
