Bruschetta
- Crostini
- Day old crusty bread, baguette is best, cut on a bias about 1/4 thick
- 2 Tblsp Olive Oil
- 1 Clove of Garlic
- Fresh Cracked Black Pepper
- Topping
- 2-3 Roma Tomatoes, seeded and chopped into 1/4 squares
- 2 Tblsp Olive Oil
- 1 Tblsp Dried Basil
- 1 Tsp Dried Oregano
- 1 Tblsp Balsamic Vinegar
- Salt and Pepper to taste
- Preheat Broiler, place rack at second highest point in oven
- Brush bread with olive oil
- Crack a good amount of fresh Black Pepper over each piece
- Toast until golden, turn and repeat on second side
- Pull bread out of oven, allow to cool for 2-3 minutes
- cut one end off of Garlic Clove, rub on each slice of toast
- Topping
- Mix all ingredients and enjoy!
