Baked Gnocci
- 1 lb Gnocci
- 1 can artichoke hearts, drained and chopped
- 8 oz shreaded Mozzarella cheeze
- 2 tbsp Olive Oil
- 2 tbsp garlic (minced)
- pepper/salt to taste
- desired italian seasonings
- 8-12 oz can diced tomatoes
- Preheat oven to 375 degrees.
- Make sauce: in a small saucepan heat olive oil and garlic until golden. Remove from heat, add desired italian seasonings, can of diced tomatoes and salt/pepper to taste. Bring to a simmer then set on low heat while cooking gnocci.
- Gnocci: Follow packaged instructions. Be sure not to overcook!
- Using a loaf pan or casserole dish, layer sauce, gnocci, artichokes & cheese. Repeat until ingredients are all used. Top with a layer of cheese.
- Bake until cheese is melted and starting to brown (approximately 15-20 minutes).
