Baked Gnocci

  1. Preheat oven to 375 degrees.
  2. Make sauce: in a small saucepan heat olive oil and garlic until golden. Remove from heat, add desired italian seasonings, can of diced tomatoes and salt/pepper to taste. Bring to a simmer then set on low heat while cooking gnocci.
  3. Gnocci: Follow packaged instructions. Be sure not to overcook!
  4. Using a loaf pan or casserole dish, layer sauce, gnocci, artichokes & cheese. Repeat until ingredients are all used. Top with a layer of cheese.
  5. Bake until cheese is melted and starting to brown (approximately 15-20 minutes).
