Sauted Spinach With Pine Nuts And White Wine
- 1 pound baby spinach leaves, washed well
- 2 cloves garlic, crushed
- 3 tbsp good quality extra virgin olive oil
- 1/3 cup dry Italian white wine
- 2 tbsp pine nuts lightly toasted
- 1/4 cup freshly grated Parmesan
- pinch of freshly ground nutmeg
- salt and fresh ground pepper to taste
- large saute pan with a lid
- 1.Wash spinach and toss in a dish towel to dry the leaves well. If possible buy packaged, pre-washed spinach.
- 2. Heat oil on medium high, and add spinach a few handfuls at a time. Stir the spinach well, to coat it in the oil. As the spinach begins to cook it will reduce, allowing you to add all the spinach very quickly.
- 3. Add the garlic, nutmeg, salt and pepper and stir well.
- 4. Add white wine, cover immediately and reduce heat to low. Allow to cook for two to three minutes.
- 5. To serve, sprinke with parmesan and freshly ground pepper, and garnish with pine nuts.
