Pork With Garlic And Crushed Pepper Mu Kratiem Phrik Thai
20 cloves garlic
2 1/2 t. black peppercorns
1/4 cup sweet black soy sauce
2 1/2 tsp veggie oil
2 tbsp brown sugar
3/4 pound pork tenderloin, cut crosswise into thin
medallions
2 tbsp Thai fish sauce
Make a paste of the garlic and black pepper by pounding it with mortar and pestle ( I started by mincing garlic in a press).
Cooking pan at medium heat with oil. Coat pan well. When quite hot, add garlic/pepper paste. Stir fry until golden and aromatic. High heat then add pork and stir fry 30+ seconds. Stir in soy sauce. Add sugar and stir fry until dissolved and blended. Add fish sauce and stir fry until pork is tender and cooked through.
