Steak Nicoise

  2. 1. Mist a broiler pan with cooking spray. Coat both sides of the steak with the salt and black pepper and place on pan. Broil 5 to 6 minutes per side or until cooked through. Transfer to a cutting board and let sit 5 to 10 minutes; cut across the grain into thin strips.
  3. 2. Whisk together the olive oil, vinegar, and mustard in a small bowl.
  4. 3. Place the potatoes in a pot with enough cold water to cover by 2 inches; bring to a boil. Boil until tender, about 10 minutes; remove with a slotted spoon and gently toss with 2 teaspoons dressing.
  5. 4. Add the green beans to the water; cook until bright green and crisp-tender, about 3 minutes. Drain and run under cold water.
  6. 5. Arrange the steak, green beans, potatoes, tomatoes, and olives on a platter. Drizzle remaining dressing over the top and serve.
