Stuffed Spaghetti Squash
- 2 spaghetti squash
- 2 Tbsp. olive oil
- 1 c. onion, chopped
- 1/2 c. celery, chopped
- garlic, minced
- 5 roma tomatoes, cut up
- 1 c. mushrooms, sliced
- 1 c. cooked brown rice
- 2 Tbsp. fresh parsley, chopped
- 2 tsp. oregano
- 1/2 tsp. pepper
- 1/2 c. shredded Mozzarella cheese
- Cook squash whole in microwave until fork enters squash easily or cut squash in half (long length) and remove seeds.
- Place squash, cut side down, in pan of 1/2-inch of water.
- Bake at 350u0b0 for 50 to 60 minutes or until tender.
- Saute the onion, garlic and celery in oil.
- Stir in tomatoes, mushrooms, rice, parsley, oregano and pepper.
- Stuff the cooked squash and sprinkle with cheese.
- Bake until cheese melts.
- Serves 6.
