Kerri'S Kookies Cranberry Almond Kookies

  1. Pre-heat oven to 365. Cream together shortening, butter, both sugars, and almond extract. Add eggs and smooth mixture. In an electric blender, blend 3 cups of oatmeal into a fine powder. Mix the powdered oatmeal, flour, salt, baking soda, cinnamon, and nutmeg in a separate bowl. Slowly add dry ingredients to wet, folding together in portions until fully incorporated. Mix in dried cranberries and almonds. Place the dough by thirds onto pieces of plastic wrap, shape into logs, fold plastic wrap over the dough to seal it, and roll the dough into uniform, sealed tubes. Refrigerate for up to 1 hour to harden the dough for slicing. Place 1/2inch slices on an ungreased cookie sheet and bake 9-11 at 365 or until bottom of cookies appear golden. Cool for 1-3 minutes, move each cookie on the baking sheet to prevent sticking, and continue to cool 5 minutes more before stacking or serving.
