Coconut Sticky Rice With Mango
- 2 cups Thai Sweet Rice (glutinous rice), soaked overnight in water
- 2 cans Coconut Milk (15 oz)
- 1 cup Sugar
- 2 teaspoons Salt
- 3 Mango, peeled and sliced
- 1 tablespoon Cornstarch
- 3 teaspoons Water
- Strain rice and place ina steamer or in the strainer and steam for 20-25 minutes until tender. While rice is steaming, combine coconut milk, sugar and salt in a saucepan and heat to dissolve sugar. Place 2/3 in a bowl large enough for the rice and wait for the rice to steam. When rice is tender, transfer to bowl with sauce and let sit for 20 minutes to absorb sauce and cool. When ready to serve, heat remaining sauce and stir in cornstarch mixed with water and bring to boil Serve rice with mango and drizzle with thickened sauce.
