Fudge-Filled Pinwheels
- Dough:
- 2 1/2 cups flour
- 6 oz. cream cheese
- 2 sticks cold unsalted butter
- 4 tbsp. Splenda
- 1/4 tsp. salt
- Filling:
- 1 cup unsweetened cocoa
- 8 tbsp. (1 stick) unsalted butter, melted and cooled slightly
- 1 cup sugar
- 1 tsp. vanilla
- 1/4 tsp. salt
- 2 egg yolks
- 1 cup chopped walnuts (optional)
- Combine dough ingredients in food processor until ball forms. Refrigerate at least one hour, or overnight.
- Mix ingredients for filling together, blending well.
- Preheat oven to 350 degrees. On floured surface, roll dough into 12" X 12" square; cut into smaller 2 1/2" squares. Place rounded teaspoon of filling in center of each square. Bring two opposite corners of the square together over filling and twist to seal.
- Place on ungreased cookie sheet and bake about 20 minutes.
