Grilled Pacific Rockfish (Cod)
- 2 medium Pacific Rockfish or Cod fillets
- 1 small lemon (use 1/2 for zest and squeeze for the juice and use the other have for small lemon slices)
- 4 cloves of garlic, crushed
- 1/2 cup dry white whine
- 1/4 t. garlic chilli sauce
- 1/4 t. jalapeno, finely chopped
- 1 T. Anaheim or other mild green chili, diced
- 3 green onions, diced including some greens
- 2 T. green bell pepper, diced
- 3 T. milk
- 1 t. cornstarch
- 1/2 stick butter
- Preheat grill to about 350.
- Set marinated fish on grill rack, cedar plank or tinfoil peirced to allow fish to cook without steaming. Average to large filets take about 15 minutes to cook.
- Melt butter in small frying pan. When melted add garlic, jalapenos, green chilis and onions. Saute approximately 5 minutes until onions are translucent and chilies soft. Add white wine, lemon zest and lemon juice and sliced lemon. Add milk; heat through. Add cornstarch to thicken to creamy sauce and simmer about five minutes.
- Remove fish from grill, pour sauce over the fish and serve. Worked well with wild rice and a green salad.
