Health Muffins
- 2 c. boiling water
- 5 tsp. baking soda
- 1 c. oil
- a little cinnamon, nutmeg, vanilla and ginger (optional)
- 2 c. sugar
- 4 eggs, beaten
- 5 c. sifted flour
- 2 c. All-Bran cereal
- 2 c. 40% bran flakes
- 2 c. wheat germ
- 2 c. raisins
- 2 c. chopped nuts
- 1 qt. buttermilk
- Add boiling water to soda, then add oil and any spices.
- Cool to lukewarm.
- Now add sugar and eggs; mix well. Set aside. Combine flour, cereals, wheat germ, raisins and nuts in a huge bowl.
- Pour in lukewarm mixture, then add buttermilk.
- Stir only enough to moisten. Batter will keep in sealed container for up to 6 weeks in refrigerator or bake muffins and freeze.
- Bake at 375u0b0 for 20 minutes. Fill muffin tins to 2/3 full only.
