Egg Delight!

• 6 eggs, lightly beaten
• 1 c milk
• 1/2 c melted butter
• 1 c Bisquick
• 16 oz cottage cheese
• 1/4 c your favorite grated cheese
• Filling might include one of the following:
• 1 lb sausage, cooked and broken into bits
• 1 lb diced ham
• 1 cup broccoli + 1 c onion
• 1 lb crisp bacon, broken into bits
• Your favorite salsa

1. Mix eggs, milk, butter, Bisquick, and cottage cheese using a hand mixer on low speed.
2. Place filling on bottom of 9"X13"X2" glass baking dish; pour mixture over filling.
3. Bake 30 minutes in 350 degree oven;
4. sprinkle chees over top and continue to bake for 10 to 15 minutes until set.
5. Let stand 5 minutes; cut and serve; top with salsa.
