Picadillo
- 1 tablespoon olive oil
- 2 pounds lean ground turkey
- 1/2 cup of chopped white onion
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow pepper
- 1/2 tablespoon chopped garlic
- 3 bay leaves
- 1 teaspoon ground cumin, toasted
- 1/2 cup of sliced green olives
- 1/2 cup of golden raisins
- 1 6 ounce can tomato paste
- 1-2 cups of water
- 1/4 cup of chopped parsley
- salt and pepper to taste
- Heat medium size dutch oven or sautee pan over high heat. Add olive oil and turkey. Distribute evenly and allow to brown on the bottom for five minutes. As it loses its red tint, mix in onions, peppers, garlic, bay leaves and cumin. Cook for 7 minutes until veggies are translucent. Add raisins, tomato paste, olives, parsley, and water. Mix thouroughly and serve over basmati rice.
