Seth'S Sriracha Glazed Meatloaf
- Meatloaf
- 1lb 80/20 organic ground beef
- 1 egg
- 1/3 cup of milk
- 1/2 cup of bread crumbs or panko
- 1.5 tsp salt
- 1 tsp freshly ground pepper
- 1 tsp garlic powder
- 1 tsp fresh tyme
- 1/2 sweet onion, chopped
- 1 clove of garlic, chopped
- Glaze:
- 1/4 cup sriracha
- 1/4 cup ketchup
- 3 tbsp brown sugar
- 4 tbsp apple cider vinegar
- Preheat oven to 350 degrees.
- Combine all the meatloaf ingredients in a large bowl and comine with your hands until well mixed.
- Press together and form a loaf being careful not to over pack the loaf. Place the formed loaf in a cast iron skillet. Smooth out the top to be almost flat.
- In a separate bowl mix together the glaze. Once the sugar has incorporated into the mix use a spoon to spread over the meatloaf. Some of the glaze will be left over for after the loaf cooks. Make sure to coat the sides of the meatloaf.
- Place in middle of the 350 degree oven and cook for 50mins to 1 hour until done. At 50 mins the meatloaf should be juicy and done and the glaze should be set.
- Remove and let stand for five minutes. Slice, serve and enjoy with a side of arugula salad.
