Chicken-Mango Lettuce Bundles
- 4 cups cooked chicken, shredded
- 3 scallions, thinly sliced
- 5 large basil leaves, slivered
- 3 sprigs fresh mint, chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- salt and pepper, to taste
- 2 tablespoons sesame seeds, toasted
- 4 tablespoons soy sauce, 3/4" thick
- 6 tablespoons rice wine vinegar
- 2 tablespoons fresh ginger, finely chopped
- 1 tablespoon brown sugar
- 4 tablespoons water
- 1 tablespoon cornstarch
- 1 tablespoon peanut butter
- 2 teaspoons sesame oil
- 2 jalapeno peppers, chopped
- 1 red bell pepper, chopped
- 1 large mango, cubed
- basil leaves, chopped
- mint leaves, chopped
- 1 lime, juiced
- 2 heads boston lettuce, washed and dried
- 1.In a medium bowl, toss chicken with scallions, basil, mint, lime juice, olive oil, and salt and pepper to taste. Place chicken salad in serving bowl. Garnish with toasted sesame seeds.
- 2.In a small bowl, combine soy sauce, rice wine vinegar, ginger, and brown sugar. In a separate small bowl combine water and cornstarch. Microwave cornstarch mixture for 20 seconds or less, just until thickened. Add peanut butter and sesame oil to thickened cornstarch mixture and stir until smooth. Add peanut butter mixture to soy sauce mixture and stir until smooth. Sir in chopped jalapeno pepper.
- 3.In a small mixing bowl combine red bell pepper, mango, basil and mint, and lime juice.
- 4.To serve, place chicken salad on a lettuce leaf. Top with dipping sauce. Top with mango salsa. Roll up lettuce leaf and eat like an egg roll.
