Chicken-Mango Lettuce Bundles

  1. 1.In a medium bowl, toss chicken with scallions, basil, mint, lime juice, olive oil, and salt and pepper to taste. Place chicken salad in serving bowl. Garnish with toasted sesame seeds.
  2. 2.In a small bowl, combine soy sauce, rice wine vinegar, ginger, and brown sugar. In a separate small bowl combine water and cornstarch. Microwave cornstarch mixture for 20 seconds or less, just until thickened. Add peanut butter and sesame oil to thickened cornstarch mixture and stir until smooth. Add peanut butter mixture to soy sauce mixture and stir until smooth. Sir in chopped jalapeno pepper.
  3. 3.In a small mixing bowl combine red bell pepper, mango, basil and mint, and lime juice.
  4. 4.To serve, place chicken salad on a lettuce leaf. Top with dipping sauce. Top with mango salsa. Roll up lettuce leaf and eat like an egg roll.
