Cranberry Strawberry Holiday Mould

  1. Cook cranberries, strawberries and fresh oranges in the spices and bring to a boil. Simmer it until the cranberries get soft and well cooked..approximately 12 minutes. Squeeze in additional orange juice.
  2. The berries and spices will smell like your favorite hot mulled wine!
  3. When the berries are smooth, and well cooked, toss in about a half cup of red wine.
  4. cook about another 5 minutes just to mull it,
  5. Pour out the contents thru a sieve and seperate your liquids from the berry/orange fruits.
  6. Measure back an equal portion of liquid that matches the instruction on your jello box.
  7. Which ever size you used.
  8. Use the hot liquid from the berries instead of WATER when mixing up your jello in a large bowl
  9. use LESS liquid by a few tablespoons and more jello powder to thicken this part well.
  10. When your jello thickens and is well mix, whisk the 8 oz sour cream into the slightly cooled mixture and then add back your fruit
  11. pour all into a jello mould and let it set more than 4 hours chilled.
  12. I ALWAYS Prepare this in advance of the holiday. A day or two before and leave covered and refridgerated in the mould until ready to serve.
  13. Add some mandarin orange slices to the top to decorate and walnuts are optional to decorate on top too
  14. you want the mould thicker, than your usual jello,but careful of not adding too much liquid, if you do add more jello powder during the first stage of chilling to absorb more of the liquid.
  15. It makes a beautiful mould
