Shrimp And Rice Salad
- 3 c. water
- 1 lb. medium fresh shrimp (unpeeled)
- 2 c. cooked white rice
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1/4 c. sliced pimento-stuffed olives
- 1/4 c. chopped onion
- 2 Tbsp. diced pimento
- 3 Tbsp. oil-free Italian dressing
- 2 Tbsp. reduced calorie mayonnaise
- 2 Tbsp. prepared mustard
- 1 Tbsp. lemon juice
- 1 tsp. lemon pepper
- 1/8 tsp. black pepper
- Bring water to a boil.
- Add shrimp and cook 3 to 5 minutes or until shrimp turns pink.
- Drain and rinse with cold water.
- Chill. Peel and devein shrimp.
- Combine shrimp and next 6 ingredients in a medium bowl.
- Combine Italian dressing and next 5 ingredients, stirring until well blended.
- Pour over shrimp mixture and toss gently to coat.
- Cover and chill 3 to 4 hours.
