Bog Bread
- 1 cup sugar.
- 1/4 cup (half a stick) butter (soft).
- 1 cup milk.
- 1 egg.
- 1 tsp. cinnamon.
- 1 tsp. vanilla extract.
- 1 tsp orange extract. (Expensive - $3.50 per bottle. You can use 2 tsp. orange zest if you have the time and the oranges.)
- 1 tablespoon baking powder.
- 1 tsp. salt.
- 2 cups flour.
- Six ounce bag dehydrated cranberries (Ocean Spray "Cranraisins" - $2.50 to $3.00 per six ounce bag - ouch!).
- If you don't want to use the cranberry raisins, and can live with a few stems in your bread, a cup of whole cranberry sauce might work, but I've never tried it.
- (1/2 cup of chopped pecans if you like nuts in bread - I don't. You can add the flavor by grinding them up in a clean coffee grinder before adding them.)
- In a mixing bowl cream all ingredients other than flour, cranberrys, and any nuts. Mix well. Mix in flour, then stir in cranberries and any nuts.
- Grease and flour a standard, 9 x 5 x 3 inch loaf pan. Bake at 350 degrees F for an hour. (Test with fork or toothpick in the middle.) Invert pan onto a rack. Let cool. Slice, and enjoy cranberry goodness. (Even my cairn terrier likes this bread.)
