Easy Enchiladas

  1. Preheat oven to 350 degrees
  2. Brown hamburger in frying pan, drain
  3. Add Taco Seasoning to hamburger and follow directions on packet
  4. Pour half a can tomato sauce in each cake pan.
  5. Put a tortilla in pan and coat with tomato sauce. Remove from pan. Sprinkle a large helping of cheese down the middle of the tortilla. Sprinkle hamburger over the top of the cheese. With a spoon, run a strip of tomato sauce over the hamburger/cheese.
  6. Roll-up by folding one side towards the center and then tightly rolling to form the enchilada. Place opening fold side down in cake pan.
  7. Repeat enchilada coating, filling and wrapping.
  8. Add additional sauce to pans to coat tortillas as needed. Sprinkle all with cheese and sauce before baking. Bake for 45 minutes.
  9. Options: Substitute chicken for beef, (you will need to cook chicken in taco seasons for flavor) You can also add tomatoes, onions, jalapeno peppers,or refried beans. Top with sour cream if you like. For crisper enchiladas
  10. use less tomato sauce. Can be made ahead of time and stored in the refrigerator until baking.
