Udon Noodles In Miso Sauce
- 1 pound fresh udon noodles
- 1 onion sliced
- 1-2 cups spinach or mushrooms
- 1T lemon juice
- 1t black seasame seeds
- 4 cloves garlic
- 3T chopped ginger
- 1T seasame oil
- Miso sauce:
- 4T miso
- 1/2 cup mirin
- 1/2 cup water
- 4T rice vinegar
- Set salted water to boil for noodles. Cook noodles until just done (14 min approx), drain and rinse under cool water.
- Heat seasame oil and carmelize onions. Add ginger and garlic in last 5 minutes of onions cooking. If using mushrooms, move onions to a plate, add oil to pan and brown mushrooms. Return onions to pan with mushrooms.
- Mix miso sauce. Add to pan with onions and bring to a bubble. Add spinach if using and stir to just wilt. Add udon noodles stir to coat noodles with sauce. Toss with seasame seeds and lemon juice. Heat to desired consistency. Serve
