Low Fat & Scrumptious Oatmeal Cranberry Cookies
- 1 cup whole wheat or all purpose flour - plus up to 1/4 cup if mixture is too thin
- 1 1/2 cups quick cooking oats
- 1/2 cup packed light brown sugar
- 1 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- other spices (allspice, pumpkin pie spice) to taste
- 2/3 cup applesauce
- 1 teaspoon vanilla extract
- 1/2 cup Craisins (half a package)
- 1 egg white (3 tablespoon egg substitute)
- Mix all ingredients together in medium bowl.
- Drop mixture by tablespoonfuls or cookie scooper onto nonstick cookie sheet.
- Bake at 350 degrees for 8-10 minutes.
- Cool on cookie pan for 2-3 minutes and then transfer to wire racks to cool completely.
- Makes approximately 3 - 3 1/2 dozen small, soft cookies.
- Recipe is easily doubled.
