Cran-Orange Oatmeal Pecan Cookies
- 1 cup Crisco (If you buy the sticks it is one stick) + 2tbs of water
- 1 1/3 cup brown sugar, packed
- 2 eggs
- 1 teaspoon vanilla extract
- 1.5 cup bread flour (can use all-purpose flour it will less chewy this way)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 3 cups rolled oats
- 1 cup chopped pecans
- 2 tbs orange zest (probably 1-2 oranges worth)
- 1/3 cup of orange juice (can use the fresh from the oranges you zested OR just use from a bottle)
- 1.5 cups of craisins or any brand dried cranberry
- Preheat oven to 350u0b0F (175u0b0C)
- In a large bowl, cream together the Crisco, water, brown sugar, egg, orange zest, orange juice and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together.
- Mix the dry into the wet ingredients until well combined. Then stir in the nuts and dried fruit. Bake for 10-12 minutes and cool on a wire rack
