Wisconsin Smokin' Ham And Cheese Salad
- Dressing:
- 1/2 cup plain yogurt
- 1/2 cup reduced fat sour cream
- 1/4 cup extra virgin olive oil
- 1 large jalapeno pepper, seeded and finely chopped
- 1 clove garlic, minced
- 1 teaspoon sea salt
- 1 teaspoon freshly ground cumin
- 1/4 teaspoon liquid smoke flavoring
- 1/4 cup cilantro leaves, coarsely chopped
- Salad Ingredients:
- 1 pound fresh peas
- 1 1/2 cups cold, cooked rice
- 1 pound smoked Wisconsin cheddar cheese, cut into 1/2 inch cubes
- 1 pound smoked ham, cut into 1/2 inch cubes
- 1 medium red onion, coarsely chopped
- Garnish: 3 Tablespoons chopped cilantro leaves
- Put all dressing ingredients in blender; combine until well mixed. Combine all salad ingredients in a large bowl; top with dressing and toss well. Top with cilantro and chill, covered, until ready to serve.
