Anghelika'S Greek Cheese Pie
- 2 cups grated cheese (such as havarti, dill havarti, swiss, gruyer, sharp cheddar)
- 1 cup crumbled feta cheese
- 2 whole fresh eggs, lightly beaten
- 1 cup heavy cream
- 1 lb frozen spinach, thawed, drained well
- 12 sheets phyllo dough
- 1/2 cup melted butter
- Combine cheeses, eggs, cream, and spinach together.
- Set butter and a basting brush near your work area.
- Set oven at 350 degrees.
- Spread out phyllo dough in front of you. Quickly butter one sheet at a time, stacking 6 sheets layered with butter. Mound half the mixture along the length of the phyllo on one third of the sheet's width. Roll all the sheets over the mixture to create a stuffed roll. Carefully lift and place on a baking pan. The sheets can tear. Repeat with remaining 6 sheets and mixture filling. Bake in a 350 oven for 45 minutes or until golden brown. Let cool 15 minutes before cutting.
