Cheesy Tuna Casserole
- 2 Tbsp. safflower oil or butter
- 1/4 c. all-purpose flour
- 1 c. milk
- 1 1/2 c. salt-free chicken broth
- 1/2 lb. Cheddar cheese, grated
- 3 c. cooked bow tie noodles
- 1 (12 1/2 oz.) can tuna in water, drained
- grated zest of 1 lemon
- 2 c. lightly cooked broccoli flowerets
- 1 c. cooked peas
- 1 carrot, peeled and minced or grated
- bread crumbs (for the top)
- chopped parsley (for the top)
- Preheat oven to 325u0b0.
- Heat the oil or butter in a medium saucepan.
- Add the flour to the pan; stir until well blended.
- Add the milk and chicken broth, whisking constantly to blend. Continue whisking as the sauce thickens and comes to a boil.
