Greek Type Shepherds Pie
- mashed potatoes made with plain yogurt or buttermilk
- 1 pound ground beef
- 1/4 cup Panko bread crumbs
- 1/4 cup minced onions
- 1 egg
- 1 tablespoon ketchup
- 1 clove garlic minced
- 1/4 tsp black pepper
- 1 large tomato sliced
- 1/2 tsp oregano
- 1/4 cup shredded swiss cheese
- 1/4 cup crumbled feta
- 1/2 10 oz package of frozen spinach thawed, dried and chopped (or 1 cup fresh chopped)
- Combine beef, bread crumbs, egg, ketchup, garlic and black pepper. Mix well. Pat been over bottom and up sides of 9 inch pie plate.
- Layer tomato slices sprinkled with oregano. Spreach cheesed over tomatoes and top with chopped spinach.
- Spoon mashed potatoes over spinach trying not to touch the meat.
- Back at 350 for 45 minutes.
