White Meat Loaf With Sun-Dried Tomatoes
- 1 lb. ground turkey
- 1/2 lb. ground veal
- 4 oz. sun-dried tomatoes
- 1/2 c. freshly made whole wheat bread crumbs
- 1 stalk celery, minced
- 1/3 lb. mushrooms, chopped
- 1 egg
- 1 1/2 tsp. finely chopped, fresh rosemary or 1/2 tsp. dried
- 1 1/2 tsp. fresh sage, chopped fine or 1/2 tsp. dried
- cayenne pepper to taste
- Preheat oven to 350u0b0.
- Cover tomatoes with water.
- Microwave on High for 5 minutes.
- Cool.
- Remove from water and chop.
- Mix tomatoes with remaining ingredients.
- Season with pepper and cayenne pepper to taste.
- Place in a nonstick loaf pan.
- Bake at 350u0b0 for approximately 1 hour and 15 minutes or until juices run clear when a knife is inserted into the center.
