Mexican Chalupa
- 1# Pinto Beans
- 3# Pork Roast
- 1 cup chopped onions
- 2 cloves garlic
- 2 Tblspn Chili Powder
- 1 Tblspn salt
- 1 Tblspn ground cumin
- 1 Tsp oregano
- 2-4oz cans of mild chopped green chiles
- 1 bag 'Fritos' or corn tortillas
- Condiments:
- chopped tomatoes
- chopped avacados
- chopped onion
- chopped black olives (4 oz cn)
- grated cheddar cheese
- shredded lettuce
- hot sauce
- Put beans, meat, 7 cups of water, onion, garlic,seasonings, green chilies in a large pot. Simmer (covered)for 5 hours until meat begins to to fall apart. The last hour (6th) uncover and continue cooking & stirring.
- Serve over chips (Fritoes or tortilla chips)
- Serve with: tomatoes, avacados, chopped onions,shredded lettuce, choped black olives, grated cheddar and hot sauce.
