Spinach And Turkey Quesadillas
- 2 cups diced cooked turkey or chicken
- 2 Tbl light cream cheese
- 1/2 cup grated 2% fat cheddar cheese
- 1 10-oz package fresh prewashed baby spinach
- 1 small diced onion
- 3 Tbl roasted red pepper (from jar), cut in strips
- 1 Tbl cajun or southwest seasoning
- 2 Tbl olive oil
- 2 8-inch flour or whole wheat flour soft tortillas
- Salt and pepper to taste
- 1/4 cup prepared salsa to taste (optional)
- Saute diced onion in 1 Tbl oil in large skillet until soft and beginning to brown. Set aside. Saute spinach in 1 Tbl oil until wilted (about 2 min). Set aside. Lightly coat one side of each tortilla with cream cheese and grated cheese. Place one at a time in heated skillet, plain side down, until it just begins to brown. Add 1/2 spinach, onion, and pepper on 1/2 of tortilla. Top with 1/2 cooked poultry. Sprinkle with 1/2 seasoning and fold 1/2 of tortilla over filled half. Repeat with second tortilla. Coat small metal baking pan with cooking spray. Place both folded tortillas in pan and bake at 350 degrees until heated through, about 15 minutes. Cut in wedges and serve with salsa, if desired.
