Chocolate Fudge Cake
- 6 oz unsweetened chocolate
- 6 tablespoons of strong brew coffee
- 1 tablespoon vanilla extract
- 3 sticks butter at room temp
- 1 lb dark brown sugar
- 1 cup granulated sugar
- 6 large eggs
- 1 cup sifted flour
- Confectioners sugar
- Oven rack at center preheat 350. Butter 10 in spring form pan
- Melt chocolate add vanilla and coffee will become paste.
- 3) large bowl electric mixer cream butter with white and dark sugar until light and fluffy
- 4) separate eggs, add yokes one at time to sugar mixture
- 5) add chocolate paste mixture and slowly add flour
- 6) beat egg whites to stiff peaks and fold into batter until no white streaks
- 7) gently turn batter into pan place in preheated oven for 1 hr or until top springs back when lightly touched.
- 8)remove and place on rack, cover with foil.
- 9) when cool store in tightly closed plastic bag.
- 10) for serving dust lightly with confectioners sugar and whipped cream (optional)
