Chocolate Fudge Cake

  1. Oven rack at center preheat 350. Butter 10 in spring form pan
  2. Melt chocolate add vanilla and coffee will become paste.
  3. 3) large bowl electric mixer cream butter with white and dark sugar until light and fluffy
  4. 4) separate eggs, add yokes one at time to sugar mixture
  5. 5) add chocolate paste mixture and slowly add flour
  6. 6) beat egg whites to stiff peaks and fold into batter until no white streaks
  7. 7) gently turn batter into pan place in preheated oven for 1 hr or until top springs back when lightly touched.
  8. 8)remove and place on rack, cover with foil.
  9. 9) when cool store in tightly closed plastic bag.
  10. 10) for serving dust lightly with confectioners sugar and whipped cream (optional)
  11. 7)
