Geek Fuel: A Breakfast Casserole
- 3 T. butter, melted
- 3 cans Recipe Creations Pillsbury Crescent Dough
- 2 lbs. Jimmy Dean Natural breakfast sausage
- 1/2 of a medium white onion, chopped
- 1 doz. large eggs
- 1 med. sized green bell pepper, chopped
- 1 16 oz. bag shredded mild cheddar cheese
- salt & pepper
- Preheat oven to 325 degrees. Brush bottom and sides of a 16x12 inch aluminum baking pan with melted butter. Unroll crescent dough, making sure the dough comes up about a 1/2 in. onto the sides of the pan, and pressing seams together to make a solid sheet of dough.
- Brown up the sausage in a large skillet, throwing in the onions as soon as you've gotten the sausage loosened up into crumbles. Remove from heat and let cool, soaking up extra grease with paper towels.
- In a large bowl, beat all 12 eggs with a pinch of salt and a dash of pepper until they're a little lighter in color and there are no loose egg whites. Add green peppers to eggs and stir to incorporate.
- Spread sausage mixture evenly over crescent dough. Slowly pour the egg mixture on top of that, as evenly as possible.
- Top with cheese, cover with aluminum foil, and bake at 325 for 40-50 minutes.
