Zucchini Banana Super Healthy Muffins
- 3/4 cup spelt flour
- 1/4 cup buckwheat flour
- 1/4 cup buckwheat groats
- 1/4 cup black chia seeds
- 1/4 cup hemp seeds
- 2 tbsp ground flax seed
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1/8 tsp freshly grated nutmeg
- 1 1/4 buttermilk
- 3 eggs
- 120g hemp E-3 live protein powder
- 1 banana, mashed
- 2 cups shredded zucchini
- 1 tbsp pure vanilla extract
- 1 cup frozen blueberries
- 1/4 cup chopped pecans + more for garnish
- Preheat your oven to 375F and line your muffin pan with parchment paper cups or coat with cooking spray.
- In a large bowl combine flours, buckwheat groats, chia, hemp, ground flax, cinnamon, baking powder, and nutmeg. Set aside.
- In a separate bowl, whisk buttermilk, eggs, mashed banana, zucchini, protein powder, and vanilla. Once mixed, pour into dry ingredients. Stir until combined before adding in blueberries and pecans.
- Pour mixture into prepared pan. Sprinkle pecans over top, if desired
- Bake for 30-35 minutes until a toothpick inserted comes out clean.
- Allow to cool for 5 minutes before removing from the pan and allowing to cool on a wire rack for an additional 10-15minutes
