One-Pot Turkey Tetrazzini
- 1 medium onion, chopped
- 2 Tbsp. butter
- 2 (10 oz.) cans chicken broth
- 1 1/2 c. water
- 1/4 tsp. pepper
- 8 oz. spaghetti, broken
- 4 oz. jar pimento, drained and chopped
- 3 oz. can sliced mushrooms, drained
- 2 Tbsp. grated Parmesan cheese
- 3/4 c. milk
- 3 c. cooked, diced turkey
- chopped parsley
- Saute onion in butter in large heavy pot until tender.
- Add broth, water and pepper.
- Bring to a boil.
- Add spaghetti gradually so liquid continues to boil.
- Cook, uncovered, for 20 minutes or until tender.
- Add more water, if needed.
- Set aside 1/4 of pimento for garnish.
- Add remaining ingredients to spaghetti, cover and heat for 3 minutes.
- Turn into serving dish. Garnish with pimento and parsley.
