Almost Carb Free Diabetic Stuffed Peppers

  1. Cut tops off peppers, scoop out inside. Cut holes or slits in bottom. Mixture is runny, this will allow excess liquid to run out.
  2. Put in microwave for 10 minutes.
  3. Pulse ( I use Ninja) chicken strips and onion till diced. Put in large bowl.
  4. Add cottage cheese, salsa, sourcream and cheese.
  5. Stir together.
  6. Scoop into bell peppers. Pack in till full.
  7. Microwave in glass dish 15 minutes or bake conventional oven for 30 minutes at 350% preheated oven.
  8. Cover with more grated cheese, let sit till melted. Cover with a dollop of sour cream and a spoonful of salsa.
  9. Serve.
