Granny'S Foster'S Banana Walnut Bread
- 4 c all-purpose flour
- 2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 2 t ground nutmeg
- 1/2 t ground cardamom
- 1/2 ob (2 sticks) butter, softened
- 2 c sugar
- 4 large eggs, lightly beaten
- 8 very ripe bananas, crushed
- 2 t pure vanilla
- 2 c coarsely chopped walnuts
- preheat oven to 350
- grease and lightly flour 2 9x5x3 loaf pans
- combine flour, baking powder, baking soda, salt, nutmeg, and carmamom in a large bowl and stir
- cream together butter and sugar in sparate bowl with an electric mixer until well blended. Slowly add beaten eggs while continuing to beat. Add bananas & vanilla & stir.
- Slowly add flour mixture to butter mixture & stir just until dry ingredients are moist and blended. Do not overmix. Fold in the walnutes & stir just to blend.
- Pour batter evenly into prepared pans & let it settle to the sides; tap pans on the counter a few times to even out batter.
- Bake 1 to 1 1/4 hrs or until the bread rises and a toothpick inserted in center of each loaf comes out clean. The bread will be slightly brown & cracked on the top.
- Let rest for 10-15 minutes before removing from the pans. Serve warm or place on a baking rack to cool.
