Fried Green Tomatoes With Roasted Jalapeno Mayonna

  1. Cut tomatoes into 1/2 inch thick slices. Set up three bowls. In the first place 1 cup flour. In the second break eggs and mix with milk. In the last bowl mix remaining flour, cumin, chili powder and salt and pepper. Coat sliced green tomatoes with flour, then egg wash and finally in seasoned flour. Fry in a heavy pan over medium heat until browned on each side, 6-8 minutes per side. Set aside and keep warm until ready to assemble.
  2. For mayonnaise roast jalapeno peppers under a broiler or on the stovetop over a gas flame until charred. Place in a small paper bag and steam. Peel peppers removing seeds and chop. Mix mayonnaise with sour cream and add roasted peppers, cilantro and lime juice. Season to taste with salt and pepper. Can be made ahead of time and refrigerated until needed.
  3. In a small bowl mix thinly sliced onion and thinly sliced bell peppers with limejuice and olive oil. Season with salt and pepper if needed.
  4. To serve plate fried green tomatoes topped with onion-pepper mixture. Finish with the roasted jalapeno mayonnaise on top.
