Spicey Wilted Kale With Coconut

  1. Heat oil in large pan or wok.
  2. Whe nhot (but not smoking) add curry leaves and mustard seeds.
  3. When mustard seeds begin to pop add chopped onion and green chilles.
  4. Stir continuously until onion is just barely transluscent.
  5. Add tumeric stir once and add greens.
  6. Stir well and add frozen coconut.
  7. Continue stiring until coconut is thawed and separates and kale is wilted but still bright green.
  8. Take off the fire, add lime juice and sugar.
  9. Season with salt to taste.
