Vegetarian Meat Balls In Tomato Sauce
- FOR THE MEATBALLS:
- 1/2 cup Sharp Cheddar
- 1 1/2 cups Saltine crackers
- 1 garlic clove
- 1/2 cup walnuts
- 1 cup onion
- 1 teaspoon fresh parsley
- 4 - 6 eggs
- FOR THE SAUCE:
- 1 quart tomato juice
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 T prepared mustard
- Crush crackers with hands and place in large mixing bowl.
- Chop parsley in food processor.
- Mince garlic in processor, then onions, then add eggs and cheese and pulse a few times.
- Add nuts last and pulse just until nuts are chopped but not pureed.
- Pour mixture over crackers in mixing bowl.
- Add seasonings.
- Prepare tomato sauce in large wide skillet deep enough to hold all ingredients. Bring to simmer and keep on low heat.
- Fry meat balls, drain on paper towels and immediately put into hot sauce.
