Southern Sweet Potato Pie
- 3 eggs
- 2 1/2 c. sugar
- 1 tsp. salt
- 1 stick margarine
- 1 Tbsp. nutmeg
- 1 tsp. cinnamon
- 1 Tbsp. vanilla
- 1 tsp. lemon
- 4 c. sweet potatoes, cooked and mashed
- 1 can flaked coconut
- 1 large can Pet milk
- 2 uncooked pie shells
- Cook sweet potatoes, about 3 or 4 medium size.
- Mash them as to cream.
- Add 3 eggs, 2 1/2 cups sugar, salt, margarine, nutmeg, cinnamon, vanilla, lemon flavoring and Pet milk.
- Mix all together until smooth.
- Add coconut, 1 can flakes or 1 cup from package. Mix all together.
- Pour into 2 shells.
- Bake at 400u0b0 for 1 hour or until knife inserted halfway between outside and center of filling comes out clean.
- Serve warm or cool, if desired.
