Spring Mint Pea Pasta
- 1 lb. whole wheat pasta or pasta of your choosing. Rotini or another swirled pasta is preferred
- 8 oz. goat cheese
- 2 c. frozen peas
- 2 c. pasta water
- 1 Tbsp sliced mint
- 1/2-3/4 tsp sea salt
- 3/4-1 tsp freshly ground black pepper
- 1)Bring the water to a boil to make the pasta, be sure to salt the water with about 1-2 T sea salt/kosher salt. Cook the pasta.
- 2)With 2 minutes left for the pasta, add the frozen peas.
- 3)Drain pasta and peas, reserving 2 c. pasta water.
- 4)Add drained pasta/peas back to the cooking pot, add 1 1/2 c. of the pasta water and all the goat cheese, salt and pepper. Add rest of pasta water as needed. Last add the mint, stir to incorporate.
- 5)Serve with a grate of Parmesan cheese and freshly ground black pepper.
