Moravian Spice Cookies
- 4 1/2 cups Flour
- 1/4 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 teaspoon Ground cinnamon
- 1/2 teaspoon Ground cloves
- 1/2 teaspoon Ground ginger
- 1 cup Light brown sugar, packed
- 1 cup Butter, soft
- 1 1/2 cups Light molasses
- 1/2 teaspoon Cider vinegar
- 1/4 cup Butter
- 4 cups Confectioner's sugar
- 1/4 cup Cream, scalded
- 1 teaspoon Vanilla
- Sift dry ingredients together in the bowl of a stand mixer.
- Add sugar and mix well.
- Gradually add butter and mix thoroughly.
- Mix in molasses and vinegar.
- Turn dough onto a strip of plastic wrap, pat into an oblong, wrap well and chill for several hours or overnight.
- Preheat oven to 350.
- Roll out, a small amount at a time, on a floured board to 1/8" thickness. Cut with floured fancy cookie cutters.
- Place on greased baking sheets and bake 10 minutes, or just until brown.
- Cool on racks.
- Blend 4 icing ingredients together until smooth.
- Divide into small bowls and add food coloring as you wish.
- Keep plastic wrap over bowls to keep icing from drying out.
