Winter Squash Quiche
- 1 (9-inch) pastry shell
- 4 slices bacon
- 2 Tbsp. chopped onion
- 1 c. shredded Swiss cheese
- 3 beaten eggs
- 1 1/2 c. milk
- 1 c. mashed, cooked winter squash
- 1/2 tsp. salt
- 1/8 tsp. ground nutmeg
- 1/8 tsp. pepper
- Bake pastry and keep it warm.
- In small skillet, cook the bacon until crisp.
- Drain bacon on paper toweling.
- Finely crumble and set aside.
- Reserve 1 tablespoon bacon drippings.
- Cook onion in drippings until tender.
- Sprinkle cheese, bacon and onion in the warm pastry shell.
- In a bowl, combine the eggs, milk, squash, salt, nutmeg and pepper; pour into pastry shell.
- Bake in a 325u0b0 oven for 40 to 50 minutes or until knife inserted near center comes out clean.
- Let stand 10 minutes.
- Garnish.
- Makes 6 servings.
