Baked Brie In Sherry Cream Sauce
- 1/2 Cup Milk
- 2 Eggs
- Unseasoned Bread Crumbs
- 4 Slices Brie Cheese
- Sherry Cream Sauce:
- 4 Tablespoons Split Shallots
- 8-oz. Heavy Cream
- 2-oz. Cream Sherry (such as Harvey's Bristol Cream)
- French Bread cut into small pieces.
- Cheese Preparation:
- Mix milk and eggs for egg wash. Coat brie with a thick egg wash and dip into unseasoned bread crumbs. Repeat this process as necessary to fill in holes. Bake at medium heat until soft, about 10 minutes. Remove from oven and cover with Sherry Cream Sauce.
- Sherry Cream Sauce:
- Toss shallots into a hot pan and stir until well caramelized. Add sherry to deglaze the pan, add cream and reduce until creamy. Salt to taste.
