Sunny'S Sweet Potato & Carrot Tzimmes
- 1 large onion (chopped)
- 2 TBSP. chicken fat or maragarine
- 4-5 lb of carrots
- 3 or 4 med. sized sweet potatoes or yams- cube style pieces
- 2 oz dried prunes (both cherry flavor & regular flavor)
- 2 oz dried apricots
- 2 oz golden raisins
- honey - not sure- just coat and mix
- 2 oranges - juice- also grate the outer rim
- 2 Lemons- juice- also grate the outer rim
- 1 tsp. of cinnamon sugar- i think I just coat and toss
- a little nutmeg
- some kosher salt and I like white pepper
- Cook the sweet potatoes and carrots in water first (do not over cook. just until firm)
- Drain and then saute potatoes, carrots spices, prunes, apricots, raisins in onions and margarine
- Nuke it or bake before ready to serve. always better the next day because the juices soak into it......
- yummy in the tummy!
