Sweet Potato - Apple Dip W/ Homemade Cinnamon Tortilla Chips

- 1 medium Sweet Potato
- 1 Gala Apple (the variety is not so important -- pick something you like)
- 1 Tbs. cinnamon (or Apple Pie Seasoning)
- 1 tsp. honey
- CHIPS
- 2 Tortilla Rounds
- 2 Tbs. Milk
- 1 Tbs. Cinnamon
- 2 Tbs. Sugar
- Dash of Nutmeg
- 1. Roast sweet potato and apple in oven at 350 degrees for 25 mins, or until soft.
- 2. While those are roasting, brush the tortilla rounds with milk.
- 3. Sprinkle cinnamon and sugar on top of tortillas.
- 4. Roughly cut tortillas into your favorite size for dipping.
- 5. After sweet potato and apple are done, put the tortillas on a oiled baking sheet in the oven to cook for 30 mins.
- 6. Remove the core from the apple.
- 7. Put the sweet potato, apple, honey, and spices in a blend or food processor. Blend until smooth (though a few chunks can be nice too)
- 8. When chips are hard and crispy, remove from oven, and allow to cool.
- 9. Enjoy dip & chips!
