Meatballs
- For Stock
- 1/2 cup chicken stock
- 1/2 large sweet onion
- 4 clove of garlic
- 1/2 bunch parsley chopped
- Place in food processor and puree.
- Meatballs
- 1/2cup ground beef
- 1/2 cup ground pork
- 1/2 cup ground veal
- 1/2 cup plain breadcrumbs
- 5 eggs
- 1/2 cup finely grated parmesan
- 2-3 pinchs chili flakes
- 2-3 pinchs salt
- In a large bowl combine all ingredients with stock, mix and blend with hands until mixture is uniform. Put a little olive oil on hands form into 2 inch meatballs.
- Pour about 1/2 inch of olive oil into staight sided wide saute pan and heat over medium high heat. Put meatballs in pan and brown, turning once. Remove with slotted spoon and submerge in the marinara sauce. Simmer for 30 minutes or until meatballs are done.
